Fruity Roller Up-ers

A sweet treat...

This year my two oldest kids both started school. Holden, who is five, went off to Kindergarden and Miss Bella started Pre-k. (they have always done EVERYTHING together since they are only thirteen months apart and it didn't seem right to keep Belle home while Holden went off to school everyday.)

I was totally committed to being the perfect mom and signed up for lots of volunteer opportunities at both schools (you can read about a recent misadventure with one of those volunteer opportunities Here), added "back to school clothes" into the August budget, and made sure there were plenty of healthy home made snacks on hand.

I packed them home made granola bars and hand mushed apple sauce in cute little reusable snack containers.

Fast forward to now...I am pretty sure my kids have brought Go-gurt (eww) or an apple for snack every day for three weeks. 

So today I decided to try out a recipe for home made fruit roll-ups and win back my SUPER MOM status.

Here's how I made the yummy snack.


I started with about 2 1/2 lbs of very ripe strawberries. (This recipe will work with virtually any fruit so use what you have or what is on sale.) I cut the strawberries into halves or quarters, and put them in a med. size pot.



I then added two teaspoons of sugar and a splash of pomegranate juice I had on hand. I cooked the mixture for about 10 mins on med. heat.



I then poured the mixture into my handy dandy food processor and blended until smooth. (basically baby food consistency) I then stuck my finger in and tested the bit stuck to the side to see if it was any good. Delicious. 



Next I lined a small cookie sheet with freezer paper and poured the mixture onto the cookie sheet. 

Then I set my oven temp to 170 degrees and baked for about 4 1/2 hours. (The recipe said to heat oven to 150 but mine only went as low as 170 and they turned out ok.)




When they looked leathery I took them out and allowed them to cool. Then cut them into strips and rolled em' up. I stored mine in a big mason jar so that I can sit them on my counter for easy access. (really any airtight container will do) 

Simple right?
And trust me, it adds major cred. to your super mommy status.

  2. I'm not much for cooking but this looks so easy and fun for a nice springtime snack!! Plus, your photos make it look so delicious!! Will have to try it!! Thanks for sharing!
